Your help to sustainable health and redesigning your body
One of my best friends Elin has a brilliant food blog (in swedish) called Fit på fett (translates Fit with fat 🙂 ). It is all low carb food. Now, I eat carbs but love her recipes. I believe we generally eat too much carbs and finding ways to eat healthy and delicious food with less carbs is always great. It helps the body keep a more even level of insuline which will help you keep a healthy weight.
On New Years Eve we had dinner together. We joined forces in the kitchen and me and my partner made the starter. Scallops. I love scallops. They are healthy. Easy to cook. And so delicious!
I had forgotten about this until visiting her blog today and just felt I had to share this!
Amazing scallops with dill dressing.
400 g scallops
0,5 dl of rapeseed oil
2 dl chopped fresh dill
a pinch of salt flakes (sea salt)
What to do:
Chop the dill and mix it with the oil. Do this a couple of hours before serving it. It will allow the oil to taste a lot more from the dill.
Just before you are ready to eat sear the scallops in some rapeseed oil in a really hot pan for about 1-1 1/2 minutes on each side. Plate the scallops and drizzle the dill oil on top. Then sprinkle the salt.
Serve this with a small sallad and a slice of lemon.
