Healthy food 10 - low carb thai meatballs in green curryIn Sweden different supermarkets give out members magazines. These generally have recipes. Yesterday me and my partner found one that we thought we try. As always, it is slightly modified, but so delicious. It is quite punchy, so in case you don’t like spicy food, try a little less green curry to start with.

You can of course vary the vegetables. Originally it is served with jasmine rice, but we chose to serve and eat it without rice and it worked perfectly. We used minced pork, as the original recipe, but if you want a even leaner dish than chose minced chicken instead.

What you need for the meatballs:

750 g of minced meat (pork or chicken)

4-5 tea spoons of finely chopped ginger

1 egg

2 cloves of garlic

salt (about a tea spoon)

olive oil

What you need for the rest of the curry:

2 bell peppers

1 yellow onion

4 medium sized carrots

1 medium sized broccoli (about 250 g)

150 g haricovert

5 tablespoons green curry paste

5 dl coconut milk (or 3,5 dl coconut cream + 1,5 dl water)

3 dl water

Fresh coriander

Fresh sweet basil (also known as thai basil)

salt and pepper

What to do:

Start out with the meat balls.

1 Chop the ginger and the garlic

2 Mix ginger, egg, salt and garlic

3 Leave the mixture in the fridge while chopping the rest of the vegetables for the curry.

4 Make sure your hands wet w cold water. Roll the mixture into meatballs.

5 Fry the meatballs lightly in some oil. Only to get a surface.

Now the green curry:

1 Chop the vegetables,belle peppers into ribbons, shred the onion, chop the broccoli into flower heads and make coins out of the stem and chop the carrots into coins.

2 Fill a big sauce pan with the coconut milk, the water, the green curry paste, salt and pepper.

3 Add the meatballs, the onion, the peppers and the carrots. Let it boil for about 10 minutes.

4 Now add the broccoli and the haricoverts. Leave for another 5 minutes.

Serve it up and chop some coriander and sweet basil on top of your curry.

Enjoy!

    All I will change is replacing the meat for some firm tofu, but I will try this on Sunday.
