Healthy food 3 – heart warming soup

Quick and healthy tomato soup

Cooking time: 20 minutes

Ingredients:

2 cans of tomatoes
4 large potatoes
1 broccoli
4 spicy sausages
1 litre of stock of your choice
1 litre of water
1 teaspoon of tomato puré
1 tablespoon of chopped sage.
A pinch of salt
A pinch of tumric (only for great antioxidant value)

How to do:

1 Chop the vegetables finely and dice the sausages into coins.

2 Blend the tomatoes, stock and water. Add the potatoes, the sausages and the spices. Bring it all to a gentle boil.

3 After 10 minutes, or when the potatoes are halv done, add the broccoli.

4 Leave everything boiling gentle until the potatoes are soft.

Taste and add more salt if needed.

You can of course add any vegetables you fancy. Remember to put them according to the time they need to get ready. And the smaller the pieces, the shorter the cooking time.

    Wow…I had creamy red pepper & smoked gouda soup today! I’m a HUGE soup fan and will use this recipe!

      That sounds yummy!! I know soup is such a great way to get lots of nutrients in, in a quick and easy way and also easy to freeze 🙂
