Warm sallad with beetroot

Warm sallad is a great and fast way to make a nutritious and delicious meal. Cooking time about 25 minutes.


Mixed green leaves of your choice

5 medium size beetroots

1/2 dl of pine nuts

Extra virgin olive oil

2 tbl spoons Thyme

The cold sauce:

1 dl of goat’s cheese

1 1/2 dl of yoghurt or crème fraîche (depending on how much fat you want)

What to do:

1 Set your oven on 225 °C

2 Slice your beetroot. The thinner the pieces the shorter time in the oven.

3 Spread the pieces evenly on an oven tray.Drizzle some oil and turn the beetroot in. Add salt and thyme. Leave them in the middle of the oven for about 20 minutes. When they are the consistency you like, take them out.

4 While waiting for the beetroot:

  • Roast the pine nuts in a frying pan. You don’t need any additional fat. The pine nuts are done quickly, so watch them!
  • Make the cold sauce simply by mixing the goat cheese and yoghurt in a blender.

5 Fill your sallad bowl with the leaves you’ve chosen, top the sallad with the beetroot and the pine nuts. You can of course also add things like cucumber, peppers, tomatoes etc.


You can varie the ingredients to your taste and what you happen to have at home. Pair the sallad with a cold sauce and whatever protein you fancy.

    This looks amazing! Where do you get your beetroot? I have heard so much about it but I have not seen it any where?

      Oh, I live in Sweden and here you can find it in any food store anywhere… Otherwise just use any root or swede that you fancy. Pumpkin works too! And gives the sallad a beautiful coulour too.
